Cousin Jennifer’s To-Die-For Sweet Potatoes
My cousin Jennifer is someone I am thankful for. She is smart, funny, honest, and absolutely loyal. What I love most about her is that she’s a perfect mix of cerebral and pretty. A conversation can flow effortlessly from forgiveness to the perfect moisturizer for my dry, wrinkly face to must-have boots for the season. When I leave her my whole person feels better.
While I’m always happy to see her, visits take on a new level of excitement around the holidays because she’s sure to bring my favorite sweet potato side dish to any family gathering.
It’s the perfect amount of sweet, and the crunchy topping is to die for. It’s amazing to think that something so easy to prepare is this delicious. You can prepare it ahead and pop it in the oven just before dinner, which is an added bonus.
So here are Cousin Jennifer’s To-Die-For Sweet Potatoes.
Filling ingredients:
3 c. cooked, mashed sweet potatoes
1 c. sugar
1/2 c. butter
2 eggs
1 tsp vanilla
Pre-heat oven to 350 degrees.
Mix all ingredients and pour into casserole dish.
Add topping:
1 c. light brown sugar
1 c. chopped pecans
1/4 c. butter
1/2 c. flour
Mix well and spread over potatoes.
Bake at 350 for 30-40 minutes.
